Maple syrup made from the sap of maple trees. In the cold climate of Canada where the trees grow, they store starch in their roots and trunks before Winter.
At the beginning of Spring and for only a few weeks as it gradually darkens and sours, they make holes in the trunks of the trees and collect the sap in buckets.

After collection, maple syrup is heated to remove the water it contains in its natural form.
