It is a type of non-ionic hydrocolloid dietary fiber and consists of D-mannan and D-glucose linked by β-1, 4 glucosidic bonds in a molecular ratio of 1:1,6–1:1,4. In addition, there are acetyl groups at random positions along the molecule. The molecular weight of glucomannan ranges up to 2,000,000, depending on the extraction processes.
Glucomannan can form a layer around the food and thus can inhibit the absorption of cholesterol and bile acids. Also, it forms a protective film on the intestinal wall and prolongs the residence time of food in the stomach. Furthermore, dietary fibers cleanse the stomach and remove toxins through intestinal peristalsis. As it is effective in water absorption and is low in calories, it promotes satiety and reduces hunger.
