Neroli and orange blossom both come from the white flowers of the orange tree, but they do not smell exactly the same. Neroli is traditionally obtained by distillation and has a fresher, greener and slightly bitter character. Orange blossom, as rendered in perfumery, is sweeter, richer and inky. The name 'neroli' is associated with a princess of Italian Nerola, who, according to tradition, loved to perfume her gloves with it.
The immortelle flower is less well known. It grows in dry, sunny Mediterranean soils and has a warm, slightly caramelized aroma. In this composition, it acts like a sun that warms the white flowers.
