It is a natural, unprocessed sweetening substance derived from the flowers of coconut trees. It is one of the most productive and widespread plants in the world, Cocos nucifera and grows in islands and coastal areas in most tropical climates.

Our Coconut Sugar comes from Java - an island in Indonesia, where the high humidity and abundant rainfall offer excellent growing conditions. Unlike other sugar products that are grown as single crops, coconut trees grow in the wild and benefit the ecosystem. According to the Food and Agriculture Organization of the United Nations, coconut sugar is one of the most sustainable sweeteners in the world, producing up to 75% more sugar per acre than cane sugar. Coconut sugar is considered one of the healthiest types of sweeteners, as it has a naturally low glycemic index (GI). When carbohydrates (starch and sugar) are eaten, they are converted into glucose and absorbed into the bloodstream. The low glycemic index releases glucose more slowly and steadily, and is therefore better absorbed by the body to control blood sugar levels. Coconut sugar is rated GI 35. By comparison, most products made from cane sugar have a GI of around 68.

This makes coconut sugar a better choice when a low glycemic index diet needs to be followed. With a plethora of vitamins and 16 amino acids, coconut sugar has a higher nutritional value than other sweeteners. Glutamine is the most prevalent amino acid in coconut sugar. Coconut sugar also contains 12 of the essential B-vitamin complexes and has a high inositol content.
